We usually only post on Monday and Wednesday, but these Pumpkin Bites are too easy, and quick, not to post.

There’s a recipe floating around, however I don’t know the original source, for Two Ingredient Pumpkin Muffins. Basically its, 15 oz of pumpkin puree and 1 box of spice cake mix.
HOWEVER, I didn’t have spice cake mix on hand. I did have yellow cake mix and wasn’t about to go to the store to purchase a cake mix when I didn’t even know how these would turn out. Plus, it’s an extra trip to the store…yeah, no!
There is the great tool out there called Google. Have you heard of it? You can google substitutions if you don’t have something…..lol.
I just added some spices to my yellow cake mix to make it a spice mix, see recipe below. Since, I had a mini muffin tin, that’s what I used to make Pumpkin Bites!

The Verdict – The Pumpkin Bites are not super sweet….very mild. Of course super simple to make. Even The Mister, who isn’t the biggest pumpkin fan, seemed to like them.
- 1 box Yellow Cake Mix use spiced cake mix if you have it and don't add the spices below
- 15 oz Pumpkin Puree
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg freshly ground
- 1/4 tsp Ground Cloves
- 1/4 tsp Ground Ginger
- Preheat oven to 350 degrees.
- With a hand mixer, beat ingredients together until combined.
- Add mixture with a mini cookie scoop if you have it or by spoon.
- Bake for 8-10 min for Pumpkin Bites. If you use the regular muffin pan bake for 15-17 min.
Looks yummy and I love pumpkin so I’m gonna have to try it!
