Roasted Tomato Caprese Pasta, The Dinnertime Story
Once there was a girl who loved to make the most with what she had.
One day, she found herself with some extra baby tomatoes.
She noticed there was a slight wrinkling to their skin but knew they were still VERY GOOD TO EAT.
In fact, she knew it sometimes makes them sweeter.
The girl decided to bring out even more sweetness by roasting them with some olive oil and salt and pepper.
“OH MY GOODNESS!” she exclaimed!
With her thinking cap on, she decided that adding these yummy roasted tomatoes to some pasta would be divine.
Now this girl likes to keep things simple so she thought upon how to make this a dinnertime meal. She added a little mozzarella and basil, caprese style, and some special touches.
Even though the girl knew of the yumminess this dish held, she did not know if the three knights would give their nod of approval.
One knight, in particular, doesn’t even like tomatoes (boo-hiss)!
The other two knights are teens!!!
She gathered them up for their evening supper.
With bated breath she gazed upon them to see if the dish delighted their taste buds as it did hers.
The knights nodded in agreement and the roasted tomato caprese pasta dish became a favorite in all the land.

- 1 Pkg Penne Pasta Aprox 17 oz

- Fresh Mozzarella or a block if you cant get the fresh
- Fresh Basil
- olive oil Good oil needed
- 2 cloves garlic or more if desired
- Salt and Pepper
- Fresh Parmesan shredded
- Fresh Parsley (if desired)
- Preheat over (a toaster oven is great for this) to 400 degrees. (Start Pasta water-see below.)
- On a pan (we use a stone pan) add tomatoes. Drizzle with olive oil and freshly ground salt and pepper. Shake the tomatoes on the pan. You want the tomatoes coated.
- Cook aprox. 15-20 min until they have popped. (Pasta will be cooking during last 10 minutes of the raosting time.)
- During the last 10 minutes of roasting the tomatoes, add pasta to SALTED boiling water. **Make sure you have enough water and the pot is large to ensure the pasta will move around and not stick together. Drain pasta RESERVING CUP OF THE PASTA WATER!!!!!!!!!!!!
- While your pasta is cooking, and tomatoes are roasting, peel and finely chop fresh garlic.
- Add freshly minced garlic to a large pasta bowl. Add hot drained pasta to the bowl to infuse the pasta with garlic. Toss to coat with a little of the starchy pasta water and olive oil.
- Squish down the tomatoes. Add the roasted tomatoes with ALL THE JUICES!!! Toss to coat
- Right before you serve, add little blobs of the fresh mozzarella, chiffonade of basil, freshly ground salt and pepper to taste, fresh Italian parsley (if desired) and some fresh parmesan. **If needed, add some additional pasta water if it's too dry.
- ENJOY!!!!!!!!!
This Roasted Tomato Caprese Pasta comes together very quickly especially if you utilize cooking time to prep everything.
Fresh ingredients are the way to make this from ordinary to extraordinary.
If you get the non-tomato and teen endorsement, than it must be pretty darn good!
