Cheese Crisps
These are a great way to use up extra tortillas. They make a quick dinner or after school snack. You can fill them with any leftover meat or just use cheese like we did here. Don’t forget the extra trick to make them super yummy.
  1. Turn on cast iron skillet or griddle to med-high heat.
  2. Once thoroughly heated, lightly spray one side of the corn tortilla and place it on the griddle to warm it up. Spray the other side and flip.
  3. Add a generous amount of cheese to one side of the tortilla. Fold in half.
  4. ***Sprinkle both sides of the tortilla lightly with salt.** Finish cooking until the cheese lightly oozes out and cooks and the tortilla is properly golden.
  5. Garnish with cilantro and green onions if desired. Serve with a light salad, salsa, sour cream, beans, and/or chips.
