Do you ever make enchiladas and have a handful of corn tortillas left?
Don’t let this tortilla crime happen to you………
There are several things to make with them: Homemade Tortilla Chips, Tostadas, and these CHEESE CRSIPS!
Now, you might think that everyone knows how to make Cheese Crisps HOWEVER….there is a tiny trick (s) that makes these sing.

First of all, we absolutely adore and recommend the Cast Iron Griddle from Lodge. We put it on two burners and leave it there. From pancakes, to cheese crisps, to grilled cheese and more. This thing gets a WORKOUT.
Second, the right ingredients make a recipe. Just little touches like fresh cilantro, lime, and green onions, can make a ho-hum dinner, extra tasty.
**We used Oil Spray to cut down on extra fat. Our salsa of choice is, Herdez Salsa Verde. (The price for the salsa, on Amazon, was higher than what we get at the store. We included links so you can see the product.)
Finally, the additional secret is…………………………. below in the recipe. We are sneaky like that!

We like easy and quick as well as making the most with what you got. Here are a few other recipes you might enjoy:
- Turn on cast iron skillet or griddle to med-high heat.
- Once thoroughly heated, lightly spray one side of the corn tortilla and place it on the griddle to warm it up. Spray the other side and flip.
- Add a generous amount of cheese to one side of the tortilla. Fold in half.
- ***Sprinkle both sides of the tortilla lightly with salt.** Finish cooking until the cheese lightly oozes out and cooks and the tortilla is properly golden.
- Garnish with cilantro and green onions if desired. Serve with a light salad, salsa, sour cream, beans, and/or chips.
