You have this amazing new recipe you can’t wait to try.
You open up a can, for the recipe, and only use half of it.
For some ingredients, this is no big deal, right?
- Tomato Paste, freeze and use in the next sauce
- Pineapple Chunks, eat alone or smoothie
But during this pumpkinpalooza season, you may not know what to do with an extra cup of pumpkin puree. Let’s face it, if that goes in the freezer, it will be lost FOOOORRREEEVVVEERR!
We found this amazing recipe for Pumpkin Ice Cream Recipe over at Serious Eats.
With all the pumpkin recipes around, ice cream was perfect for us, cause it’s not quite cold enough for anymore baking recipes.
We did make a couple of modifications to the original recipe as (our recipe below):
- We don’t drink Bourbon, so we weren’t about to get a bottle for just a tsp. so we added 1/4 tsp of vanilla extract as a substitute.
- The recipe calls for ground nutmeg with a note regarding grinding your own nutmeg. We completely agree and just added that to the recipe ingredients. Fresh grind is best!!! Just say no to bottled nutmeg!
- The final substitution we made was on the dark brown sugar. We only had light brown sugar. No problemo cause it’s just extra molasses which we had and added that to step 2.
**If you are ever short on ingredients, always google substitutes.
The special equipment, in this recipe, called for an ice cream maker.
We were blessed to find our Cuisinart Ice Cream Maker at a local bunny rescue thrift store when we lived in Phoenix, AZ, Brambley Hedge.
It was brand new. Guess someone got too many for a wedding gift or someone just didn’t like ice cream…what?????? Is that even possible?

This is a wonderful pumpkin treat slightly adapted from the Serious Eats Recipe (see link).
|
- 2 cups Heavy Cream also known as whipping cream
- 1 cup Whole Milk We used 3/4 c 2% and 1/4 c half and half as that is what we had)
- 1 . Vanilla Bean split and scraped
- 3/4 cup Brown Sugar we used light (see note above)
- 1 tsp Molasses
- 8 . Egg Yolks
- 1 cup Pumpkin Puree
- 1 tsp Ground Cinnamon (WE LOVE PENZEYS)
- 1/2 tsp Ground Cloves
- 1/4 tsp Ground Nutmeg FRESH!!!!
- 1/4 tsp Vanilla Extract Good stuff here please!
- 1/2 tsp Kosher Salt ***To Taste
- In a medium saucepan over medium heat, bring cream and milk to a simmer. Stir in vanilla bean, cover, remove from heat, and let steep for 1 hour. Discard vanilla bean or wash and dry for another use.
- In a second saucepan whisk together sugar, molasses, egg yolks, pumpkin purée, and spices until very well combined. Slowly poor milk mixture into saucepan, whisking constantly, until fully incorporated. Set over medium heat and cook, stirring frequently, until a custard forms on the back of a spoon and finger swiped across it leaves a clean line.
- Pour custard through a fine mesh strainer into an airtight container, then stir in vanilla extract and salt to taste in 1/4 teaspoon increments and chill overnight.
- The next day, churn according to manufacturer's instructions. Transfer ice cream to airtight container and chill in freezer for at least 4 to 5 hours before serving.
- *Did you know you can freeze egg whites until you are ready to use them? Use an ice cube tray and freeze each egg white separately.
Our Notes-
The notes on the Serious Easts site says up to 3/4 tsp salt. We stopped at 1/2 and glad we did. Anymore and we wouldn't have liked it.
If you use good quality spices, the spice flavor was amazing.
It was surprisingly not super sweet. This was a very sophisticated ice cream, but don't think kids would turn it down in the slightest.

Ohhhh Deborah!!! This is right up my taste buds! I adore pumpkin anything. And ice cream well yum! We live in a small town and pumpkin ice cream is here to find even at this time of the year. Not I can make it my self. Pumpkin is a SUPER food too. Plus it’s great for dogs. I give our two a spoonful every few days.
