Leftover Cranberry Sauce Bars
Have you checked the back of your fridge lately?
There might be some Thanksgiving containers that are lurking about. Ekkkkkkk
Now some of those might have gone past their prime, but cranberry sauce has a good shot at being usable. But who wants more plain cranberry sauce at this point?
Been there, done that!
One of the ways we like to use it up is to add it on top of applesauce. As a topping to plain yogurt, would be lovely as well.
And since the holiday season calls for baked goods, we decided these easy Cranberry Bars, from Allrecipies, were the way to go. They use regular pantry ingredients including a Betty Crocker cake mix. (affiliate link) We just used our already prepared cranberry sauce.
Keep in mind, if you have a fruit bar recipe you like already, you can just change out the topping to cranberry sauce, to make these leftover cranberry sauce bars!!!
**Tip- This is a great way to use up extra jam as well.
P.S. – We have a fantastic cranberry relish recipe, HERE.
- 1 Yellow Cake Mix
- 2 Eggs
- 3/4 cup butter, melted
- 1 cup Rolled Oats Not Instant
- 3/4 cup Brown Sugar
- 1 tsp Ground Ginger
- 1 tsp Ground Cinnamon
- 2 cup Prepared Cranberry Sauce homemade
- Preheat oven to 350 degrees.
- "In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9x13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer."
- Bake about 35 min depending on your oven. Let cool in pan for another 30 min or more. ENJOY!
