But I don’t take everything and our house is not a hoarder house, I promise!!!
Recently, at work, they had TONS of oatmeal cookies leftover. No one was taking them and they had been around for about a week.
Guess who?
I decided to use them as a cookie crust for some apple tartlets.
I ground them up, and added some butter, of course!
I prebaked them while I worked on my filling which was the typical apple pie ingredients.
And in less than 30 min (start to finish), I had a dessert that had the kitchen crowded in a flash!
Leftover cookies……..Cookie Crumb Apple Tartlets
- 2 cups Cookie Crumbs ground in food processor
- 3 tbsp Melted Buter
- 1 large Apple (Granny Smith) small dice (or two small)
- dash Lemon Juice
- 1/8 cup Brown Sugar (not packed)
- 1/8 cup White Sugar
- 1 tsp Cinnamon or add more to your taste
- 1 tbsp Flour
- pinch salt to taste
- For the crust: Take the cookies and grind them in a food processor.
- Melt butter and add to the cookie crumbs.
- Press mixture into lightly sprayed tartlet or mini muffin pan. (Reserve some mixture for the tops of the tartlets.)
- Bake 8-10 min at 325 degrees.
- Peel and dice apple into small pieces.
- Into medium bowl add apple, cinnamon, flour, lemon juice, and sugars. Mix together.
- Add filling to pre-baked tartlets.
- Top tartlets with the some of the reserved cookie crumb mixture.
- Bake tartlets for 8-10 min at 325 degrees. Checking half way to ensure crust is not getting too dark. Serve and Enjoy!
My oven cooks a little on the hot side, so adjust your oven temps as needed.
I used oatmeal raisin however I would have tried harder to pick more raisins out next time. Other cookies that would easily work sugar, snicker doodle, use your imagination.
My family enjoyed these apple tartlets, hope yours does as well.
