Mini Spiced Gingerbread Loaves

Ah, the smell of gingerbread. The spices just scream the holidays to me. But let’s face it, making homemade gingerbread is time-consuming and sometimes doesn’t come out as good as intended.
The other problem? There can be a lot of waste. Sure some the candies get eaten while it’s being made but in the end, a lot of it just sits for a while and then gets tossed.

These mini spiced gingerbread loaves will give you all the holiday flavor and taste with less waste. Plus, these make a GREAT homemade gift!

INGREDIENTS

- ½ cup brown sugar
- ½ cup butter softened
- ¼ cup molasses (here is a baking molasses)
- 1 teaspoon vanilla
- 2 eggs
- ½ cup milk
- ½ cup sour cream
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 4 teaspoons ground ginger
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
- Powdered sugar for dusting
INSTRUCTIONS
- Preheat the oven to 350F. Grease a 6 cup mini loaf pan and set aside.
- In a large mixing bowl, cream together the brown sugar and butter until fluffy.
- Add the molasses, eggs, and vanilla to the sugar/butter and mix well.
- Next, add the milk and sour cream and beat well.
- Add the flour, baking soda, baking powder, ginger, nutmeg, cinnamon, cloves and salt, and mix until well combined.
- Spoon the batter evenly into the greased mini loaf tins.
- Bake for 45-50 minutes, until a toothpick comes out clean.
- Cool in the pan for 10 minutes before removing loaves to cool on a wire rack.
- Dust with powdered sugar if desired.

Mini Spiced Gingerbread Loaves
Delicious mini spiced gingerbread loaves are a perfect way to start the holiday season and make a great gift.

Hello! I’m trying these out in my holiday treat baskets for family this year. I was wondering how long they keep for if I make them ahead of time?

These are like a typical banana bread loaf and would have the same keep time if you will. They can easily be frozen. I hope that helps.
They would probably last about the average time. I would say best to eat within a few days.
I made these this evening! I didn’t have mini loaf pans so I used mini brioche cake pans and a jumbo muffin tin. I baked them about 25 minutes. They turned out like a cross between a cake and bread. I made a powder sugar, milk and vanilla frosting for the cakes and drizzled it over the cakes. Enjoyed the molasses taste. Would love to post a picture I took.

Who says you can’t have your gingerbread house & eat it too? I think this recipe would work in a Nordic Ware Platinum Cozy Village Baking Pan! Makes six little village houses.

whole wheat flour usually can’t be substituted exactly 1 to 1 as it’s such a heavier flour. I would try subbing some but not all. What you want to avoid is a dense loaf.
Can’t wait to taste these as they just came out of the oven. But the suggested time was definitely too long. Only took 25 minutes to bake!

Have you made these in square muffin pan? I was thinking instead of the loaves, using my pampered chef square muffin pan.
That would probably work just fine…just adjust your cooking time.
