Lemon Beehive Cupcakes

Did you know:
Honey bees are among the most numerous and efficient pollinator species in the world. Considering that the average honey bee can visit more than 2,000 flowers in one day, these bees greatly increase the chances of a plant producing a fruit or vegetable.
Honey bees are the species most commonly used as commercial pollinators in the US. They are managed and used to pollinate over 100 crops grown in North America, and contribute $15 billion to the US economy every year. Many crops, such as almonds, which contribute $4.8 billion to the US industry each year, rely on honey bees for more than 90% of their pollination.
But honey bees don’t only pollinate crops– they also pollinate wild and native plants, thus contributing to all the environmental and societal benefits attributed to pollinators in general above. – Planet Bee Foundation
In honor of these amazing little creatures, here are some delicious lemon beehive cupcakes. Why not make them for your next celebration, just for fun, or for National Honey Bee Day on August 17th this year?

INGREDIENTS:
- 2 1⁄4 cup sifted all purpose flour (sift 3 times for best results)
- 1 1⁄2 cup sugar
- 3 1⁄2 tsp baking powder
- 1 tsp salt
- 1⁄2 cup butter, room temp
- 1 tsp lemon extract
- 4 egg whites
- 1 cup milk
- candy decorations (bees, sprinkles)
Lemon Buttercream Ingredients List:
- 3 3⁄4 cup confectioner sugar
- 1/3 cup butter, room temp
- 1 tsp lemon extract
- 1 tbsp lemon zest (or combine lemon and lime zest)
- 3-4 tbsp heavy cream
- yellow food color

Additional items:
- Stand or hand mixer
- Cupcake paper cups, I really love THESE natural ones
Instructions:
- Sift together flour, sugar, baking powder and salt.
- Add butter, lemon extract, and milk to flour mixture. Beat to combine.
- Add egg whites to the mixture.
- Beat 2 minutes.
- Scoop into cupcake paper cups to 3⁄4 full.
- Bake 350° for 20-22 minutes or until a toothpick inserted in center comes out
clean. - Allow cupcakes to cool completely before decorating.
- Blend all ingredients for buttercream frosting.
- Add yellow food color to the desired tint.
- Pipe frosting with a desired decorating tip. To create a beehive, first pipe a large dollop of frosting in the center of the cupcake, allowing it to create a little tower. Pipe around the tower in a circular fashion until reaching the top.
