Instant Pot Meatballs

No doubt…the Instant Pot has been a huge hit in many households in the last couple of years. For good reason too! This little machine can produce dinner in no time.
In fact, my MIL gave me an Instant Pot for Christmas and then wanted one herself so I bought her one the following Christmas.
Two things we love about this…

- One ingredient in meatballs is bread crumbs which are super easy to make from stale (hard) bread. #wastenotwantnot
INGREDIENTS
INSTRUCTIONS
Finely chop your onions and set aside. Prepare your Instant Pot by setting to “saute” and add olive oil. Add in half of your onions and saute until translucent.
In a medium bowl add your ground beef, remaining onion, tomato paste, and ¼ cup of the broth. Mix until combined. Add in your egg and bread crumbs and mix until all ingredients come together.
In a small bowl combine the remaining 1 cup of broth with the flour. Add in the Worcestershire sauce, and mustard.
Gently shape your meatballs by adding about 2 tbsp of meat mixture into your hand and roll until you have a ball. This recipe will make about 12 meatballs
Add the meatballs in batches into your Instant pot on saute. Brown for about 2 minutes on each side until they are a nice golden brown. Continue this with all of the meatballs.
Add in all of the browned meatballs and place the broth mixture over the top.
Place your lid on your instant pot and set on high pressure for 10 minutes.
Manually release the pressure on your pot and carefully. Serve over mashed potatoes or your choice of sides and enjoy!
