It’s just not the holiday season without cranberries for me. In fact, this is one of the first recipes I posted as it’s a family favorite (photography skills were a little basic but the recipe is yummy). And now, this cranberry butter is sure to be a staple on Christmas morning. Cranberries for everyone!
I learned something in the juice isle, and that is, I don’t know what’s going on with cranberries, but they’re getting in all the other juices. Whoever the salesman for cranberries does a great job. He’s showing up everywhere. “Hey what do you got? Apples? Well let’s put some cranberries in them; we’ll call it cran-apple – go fifty fifty. What do you got? Grapes? What about cran-grape? What do you got? Mangos? Cran-mango! What do you got? Pork chops? Cran-chops! – Brian Regan

INSTANT POT CRANBERRY BUTTER

INGREDIENTS
- 6 C fresh cranberries
- 1/2 C brown sugar* (packed)
- 2 oranges
- Water
* You can increase the sugar to 1 cup if you want a sweeter taste.
TOOLS
- Instant Pot
- Juice squeezer (see options from Amazon below)
- Zester (also known as a microplane)
- Liquid measuring cup
- Food processor or my favorite kitchen tool Immersion hand blender
- Diamond half pint mason jars

DIRECTIONS
- Zest the 2 oranges. Add the zest to the Instant Pot.
- Squeeze the juice of the 2 oranges into a liquid measuring cup.
- Add water to the same measuring cup to equal 1 full cup of liquid.
- Set aside the Instant Pot. Add water, cranberries, and brown sugar to the instant pot.
Mix well. - Turn the Instant Pot to High Pressure. Set it for 10 minutes. Allow the Instant pot to cool completely. To release the built up steam use the quick release function.
- Add the cranberry-orange mixture to a food processor or use your immersion blender...seriously I use this thing every week for soups, homemade pancakes, sauces, etc!!! Puree.
- Add to mason jars with lids.
- Put in the refrigerator to cool or until ready to serve.
